With over 20 years in the Saudi market, Carlos has played a major role in shaping the local F&B scene, developing homegrown brands, managing large restaurant and retail portfolios, and bringing exclusive concepts to life. As Projects Director at FAM Holding, he led the creation of HŌCHŌ in Via
Riyadh, a Saudi-Japanese fusion restaurant built in just 20 days, where he introduced the way of cooking Halal A5 Kobe beef.

Over the years, he studied the traditional ways: how to hold a hocho, means a knife, how to slice meat with care, how to prepare rice like it’s a ceremony.
